Coconut Chutney

..after hearing Chutney ( sauce) word the first thing which comes in my mind is its tangy taste.:);)....Coconut chutney goes excellent with dosa, idli or with any food  u like..  to spice up with the tangy taste of chutney.It's made out of fresh coconut , Chana dal (split gram) ,tamarind n spices......


INGREDIENTS:
fresh coconut slices                 
tamarind
chana dal           
chili powder
salt
oil for stir frying coconut pieces
cumin seeds


METHOD:
Heat a pan , pour some oil n add some cumin seeds, chana dal roast them then add coconut pieces, stir fry them for few sec. 
Soak the tamarind in warm water for 10-15min. then make a paste and sieve it.
Make a paste of roasted mixture in grinder with tamarind paste.
Add salt and chili powder according to taste.
Serve with dosa , idli ....Enjoy!!!

Sweet Dry mango chutney ( amchur khatai)


INGREDIENTS:
dry mango (amchur) slices 4-6
jaggery 1cup
dry chilli 1-2
cumin seeds 1tsp
water 2cups
oil 1tsp

METHOD:

  • Take 1 cup warm water and soak dry mango slices in it for 45min.

  • Heat a pan and pour oil , add cumin and chilli ..., stir for fewseconds until it becomes brown. Mix the jaggery with water and pour it in pan and stir to dissolve it in water .

  • Then add dry mango slices soaked in water and boil the whole mix for 20 min. or when it starts getting thicker.

  • Cool it and enjoy with snacks or with food also.... It's the famous" khatai" of Uttranchal !! U.P. INDIA

Ginger chutney (Andhra style)


INGREDIENTS:

freshly chopped ginger 1/2cup
mustard seeds 1/2tsp
hing (asafoetida) 1/4tsp
urad dal (washed) 1tsp
dry chilli 3-4
jaggery 1/2cup
oil 2-3tsp
curry leaves 1/2cup
tamarind paste 1tsp
salt as per taste

METHOD:
In a pan heat oil and add hing and mustard seeds.When mustard seeds start popping add urad dal and fry.Then add chilli, ginger and curry leaves fry until become brown. Remove from burner and grind the mix in a mixer with jaggery .Add some salt as per taste. Serve it with south indian dishes like dosa or idli....
