Easy Crunchy pani poori...!!

pani pooris are famous street snack in India..now also u can found it in many  restaurant menus....PANI is for water and poori is light  puffed bread .It is a crispy , hollow puri which is deep fried filled with mixture of water made from mint leaves , coriander, chaat masala n stuffed with boiled potato pieces and chick peas...
it's my second time when i got perfect crisp puris ..:)..actually, it depends upon rolling the dough evenly and perfect temperature for frying...it may come out soft not crisp or don't puff well but by trying u will get the right consistency for dough ...just try..it takes minutes to make and just sec. to be finished right from plate...:):)
for pani or making spicy water just grind the below mentioned ingredients ..and add water to it..let's try it..!!!


INGREDIENTS:
Fine Sooji or semolina – 1/2 cup
Salt – 1/4 tsp
Baking Powder – 1/8 tsp
Warm Water – 1/4 cup
All-Purpose Flour (Maida) – 1 Tbsp
Oil – 1 tsp
Oil – for deep frying
METHOD:
  • In a  bowl , add Sooji, Salt and Baking Powder. Mix well.
  •  Add warm water and soak the sooji...or semolina don't add too much water..
  • Now add All-Purpose Flour and knead the sooji for 5 minutes until it become  smooth and firm.
  •  Add 1 tsp Oil and knead ..
  • Wrap dough in a cling wrap or cover it and let it rest for 20 minutes. 
  • Heat oil in a pan.
  •  Divide dough in small pieces and roll out each puri or u can  roll a big round and use a cookie cutter or cap of a bottle to cut round puris.
  •  Deep fry puris until light golden brown and crisp and remove them onto a paper towel 
for making pani for panipoori:
1/2 cup Tamarind (Imli) Pulp can make in home by soaking it in warm water
2 cups Water
2 tblsp roasted Cumin Seed (Jeera) Powder
Coriander Leaves
3 Green Chilly or red chilli powder
2 tblsp Mint Leaves (Pudina Leaves)
1 tblsp Black Salt (kala namak )
sugar for sweetness as per taste





METHOD:
  •  GRIND all ingredients.
  • Adjust spices and tangyness to taste.
  • Strain through a wire strainer to remove any rough bits.
  • boil potato and chick peas can use cannned ones also..stuff it in puri dip in spicy water and serve...ENJOY!! this mouth watering dish...:)

Fruit chaat


INGREDIENTS:
apple            
grapes  
papaya 
or any fruit you like guava, pear, orange, banana....
chat masala                             1tsp
orange juice or lime juice      1tsp  
honey                                      1-2tsp

METHOD:
  • wash all the  fruits and cut them to bite size  .
  • mix honey, chat masala, orange juice or lime juice , salt if needed.
  • serve fresh as a snack with tooth picks.

Aloo tikki recipe



"Aloo"is potato and "tikki" is cutlet .Aloo tikki is North Indian snack made with boiled potato , spices and served with sauce made from tamarind and coriander or cilantro and yogurt .




INGREDIENTS:

- tikki:
boiled potato 2
bread (1slice)
oil 2-4TSP

-garnishing:( for 1 plate chat)
green chutney 1tsp
red chutney 1tsp
salt
cumin powder 1/4tsp
yogurt 2tsp
chilli powder 1/4tsp
boiled pea 2tsp
chopped onion
chopped coriander
few pomegranate seeds
carrot shredded
sev

Method:

  • mash boiled potato and bread in a bowl and make small tikki or cutlet. 
  • Pour some oil in pan and fry tikki...until it become brown on both sides. 
  •  Take one plate and put tikki on it ,cut it in half with spoon and add some yogurt (with no lumps) then sprinkle some salt, cumin powder, chilli powder .
  • Then add 1tsp each of green and red chutney and garnish it with shredded onion, carrot,coriander ,sev and pomegranate seeds .here's your aloo tikki ready..Enjoy!!
